Medenjaci – Croatian Honey Spice Cookies
- Prepare the Butter Mixture
- In a saucepan, heat the butter, sugar, and honey over low heat, stirring constantly until the sugar and butter are completely melted.
- Remove from heat and let the mixture cool for about 10 minutes.
- Whisk the Eggs
- Lightly whisk the eggs in a separate bowl.
- Mix the Dry Ingredients
- In a large bowl, combine the baking soda, spices, all-purpose flour, whole wheat flour, and cake flour. Mix well.
- Combine Wet and Dry Ingredients
- Add the lightly beaten eggs to the cooled butter mixture, then gradually mix in the flour and spice mixture.
- Stir until you have a smooth and soft dough.
- Rest the Dough
- Cover the dough with foil and let it rest in a cool place for 1 to 3 days.
- Shape the Cookies
- After resting, divide the dough and roll it into long rolls approximately 1.5 cm in diameter.
- Cut the rolls into smaller pieces and shape each piece into a ball about the size of a walnut.
- Prepare for Baking
- Place the dough balls on a baking sheet lined with parchment paper or a silicone baking mat, leaving a few centimeters of space between each.
- Gently insert a quarter of a walnut kernel halfway into the top of each cookie.
- Bake the Cookies
- Preheat your oven to 190°C (375°F) and bake the cookies for 10-12 minutes, or until they are lightly golden.
- Cool and Store
- Remove the cookies from the oven and allow them to cool completely on the baking sheet.
- Once cooled, store the cookies in an airtight container.
