Mini Zucchini Bites (Cuadritos De Calabacin)
- Prepare the Ingredients:
- Preheat your oven to 375°F (190°C).
- In a sauté pan, cook the bacon until crisp. Remove from heat and set aside to drain on paper towels.
- Using 2 tablespoons of the bacon fat, sauté the onion over medium heat until translucent. Remove from heat and set aside.
- Prepare the Zucchini Mixture:
- In a large mixing bowl, combine the grated zucchini, cheese, flour, baking powder, oil, eggs, cooked bacon, sautéed onion, salt, and pepper. Stir until all ingredients are well incorporated. Set the mixture aside.
- Prepare the Baking Pan:
- Lightly grease a 10×7-inch baking pan with melted butter. Sprinkle breadcrumbs evenly inside the pan, ensuring all surfaces are covered.
- Bake:
- Pour the zucchini mixture into the prepared pan and spread it evenly.
- Bake for 45-60 minutes, or until the mixture is firm and golden brown on top.
- Cool and Serve:
