Moon Pies
- Preheat Oven and Prepare Baking Sheet:
- Preheat your oven to 400°F (200°C). Lightly grease a cookie sheet or line it with parchment paper.
- Prepare the Cookie Crusts:
- In a large mixing bowl, cream together 1/2 cup of butter (or margarine) and white sugar until light and fluffy.
- Add the egg, evaporated milk, and vanilla extract. Mix well to combine.
- In a separate bowl, whisk together the flour, salt, cocoa powder, baking soda, and baking powder. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
- Shape and Bake the Cookies:
- Drop rounded tablespoonfuls of the dough onto the prepared cookie sheet, leaving at least 3 inches between each as the cookies will spread while baking.
- Bake for 6 to 8 minutes, or until the cookies are firm when lightly pressed.

- Top with the flat side of another cookie to form a sandwich. Gently press to distribute the filling evenly.
