No Fuss Sunday Slow-Cooker Balsamic Pot Roast

  • Layer the onions:
    • Place the onions in the bottom of the slow cooker. (Feel free to use a mix of red and white onions if you have both—they add great flavor!)
  • Add the roast:
    • Set the roast on top of the onions, then season the meat generously with salt and pepper.
  • Prepare the seasoning mix:
    • In a small bowl, whisk together the broth, vinegar, tomato paste, tapioca, garlic, and Italian seasoning until smooth.
  • Pour and cook:
    • Pour the seasoning mixture over the roast, covering it evenly.
    • Cover the slow cooker with the lid and set it to low for 8–10 hours. For a quicker cook, set to high for 4–5 hours.
    • Tip: Try not to open the lid during cooking, as this lets out valuable heat.
  • Serve:
    • Once the roast is tender and easily pulls apart, transfer it to a serving dish.
    • Use the rich, flavorful juices and onions left in the slow cooker as gravy. Pour the liquid into a gravy boat for easy serving.
  • Enjoy:
