Peanut Butter, Banana & Chocolate Chip Muffins
- Preheat Oven:
- Set your oven to 350°F (175°C) and lightly spray a muffin tin with cooking spray or line with paper liners.
- Prepare Dry Ingredients:
- In a large mixing bowl, sift together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon. Stir until well combined and set aside.
- Blend Wet Ingredients:
- In a food processor, combine the bananas, yogurt, milk, peanut butter, egg, oil, and vanilla extract.
- Pulse until the mixture is smooth and creamy.
- Combine Wet and Dry Ingredients:
- Pour the wet mixture into the bowl with the dry ingredients.
- Gently fold the ingredients together until just combined—avoid overmixing.
- Stir in the chocolate chips until evenly distributed.
- Fill Muffin Tins:
- Spoon the batter into the prepared muffin tin, filling each cup to the top.
