Polla alla Parmigiana: Chicken Parmesan

  • Prep the Oven and Chicken:
    • Preheat the oven to 350°F (175°C).
    • Pound chicken breasts or thighs to an even 1-inch thickness.
  • Set Up Breading Stations:
    • In a shallow dish, mix flour, salt, and pepper.
    • In a second dish, beat the eggs with 1 tablespoon of water.
    • In a third dish, combine breadcrumbs, panko, marjoram, and grated Parmesan cheese.
  • Bread the Chicken:
    • Dredge each chicken piece in the flour mixture, shaking off excess.
    • Dip both sides in the egg mixture.
    • Coat both sides in the breadcrumb mixture, pressing gently to adhere.
  • Cook the Chicken:
    • Heat oil in a large sauté pan over medium-high heat.
    • Cook breaded chicken pieces for 2–3 minutes per side, until golden brown. Avoid overcrowding the pan.
    • Transfer cooked pieces to a baking sheet lined with parchment paper or lightly greased.
  • Add Sauce and Cheese:
    • Spoon a layer of tomato sauce over each piece of chicken.
    • Place a slice of mozzarella on top of each.
  • Bake:
    • Transfer the baking sheet to the preheated oven.
    • Bake until the mozzarella is melted and bubbly, about 10–15 minutes.
  • Serve:
