Roasted Beet Hummus
- Blend the Base Ingredients:
- Place all the ingredients, except for the chickpeas and olive oil, into a food processor or blender.
- Pulse until the mixture is well blended and smooth.
- Add the Chickpeas and Olive Oil:
- Add the drained chickpeas and a portion of the olive oil to the processor.
- Pulse again until the chickpeas are just incorporated, creating a smooth, thick paste.
- Adjust the Consistency:
- Gradually add more olive oil, as needed, to achieve your desired consistency. For a creamier hummus, blend longer; for a thinner hummus, add additional olive oil or a bit of water.
- Serve:
- Transfer the hummus to a serving dish and drizzle with a little extra olive oil if desired.
- Serve with warm pita, flatbread, or your choice of fresh vegetables.
