Roasted Beet Hummus

  • Blend the Base Ingredients:
    • Place all the ingredients, except for the chickpeas and olive oil, into a food processor or blender.
    • Pulse until the mixture is well blended and smooth.
  • Add the Chickpeas and Olive Oil:
    • Add the drained chickpeas and a portion of the olive oil to the processor.
    • Pulse again until the chickpeas are just incorporated, creating a smooth, thick paste.
  • Adjust the Consistency:
    • Gradually add more olive oil, as needed, to achieve your desired consistency. For a creamier hummus, blend longer; for a thinner hummus, add additional olive oil or a bit of water.
  • Serve:
    • Transfer the hummus to a serving dish and drizzle with a little extra olive oil if desired.
    • Serve with warm pita, flatbread, or your choice of fresh vegetables.
