Sardine Croquettes (Croquetas De Sardinas)

Prepare the Cassava:

  1. Cook the Cassava:
    • Use frozen cassava for convenience. In a pot of salted water, cook the cassava (yuca) until fork-tender.
  2. Mash the Cassava:
    • Once thoroughly cooked, mash the cassava until smooth and free of lumps.

Make the Sardine Mixture:

  1. Combine Ingredients:
    • To the mashed cassava, add sardines (drained), shredded cheese, egg yolks, baking powder, salt, pepper, and chopped cilantro or parsley.
    • Mix everything thoroughly until well combined.

Shape and Coat the Croquettes:

  1. Preheat Oil:
    • Heat oil in a frying pan over medium heat.
  2. Form the Croquettes:
    • With wet hands, shape the sardine mixture into balls or small cylinders.
  3. Coat the Croquettes:
    • Dip each croquette into beaten egg whites, then roll in breadcrumbs to coat evenly.

Fry the Croquettes:

  1. Fry Until Golden:
    • Fry the croquettes in hot oil, turning occasionally, until golden brown on all sides.
