Savory Olive & Goat Cheese Palmiers

  • Prepare the Dough:
    • Thaw puff pastry dough according to package directions.
    • Lightly flour a flat work surface and place one sheet of dough on top of the other. Gently roll out the stacked dough into a 9×12-inch rectangle, about 1/4-inch thick. Alternatively, you can use each sheet of dough separately.
  • Add the Filling:
    • Evenly spread olive tapenade across the surface of the dough.
    • Sprinkle crumbled goat cheese over the tapenade, followed by toasted pine nuts.
  • Roll and Chill:
    • Roll the short ends of the dough inward toward the center until they meet.
    • Tightly wrap the rolled dough in plastic wrap and refrigerate for about 30 minutes to firm up.
  • Preheat and Prepare:
    • Preheat the oven to 425°F (220°C).
    • Line a baking sheet with parchment paper or a silicone baking mat.
  • Slice and Bake:
    • Unwrap the chilled dough and use a serrated knife to cut it into 1/4-inch thick slices.
    • Place the slices on the prepared baking sheet, spacing them about 2 inches apart.
    • Sprinkle the tops with a pinch of coarse salt.
