Savory Olive & Goat Cheese Palmiers
- Prepare the Dough:
- Thaw puff pastry dough according to package directions.
- Lightly flour a flat work surface and place one sheet of dough on top of the other. Gently roll out the stacked dough into a 9×12-inch rectangle, about 1/4-inch thick. Alternatively, you can use each sheet of dough separately.
- Add the Filling:
- Evenly spread olive tapenade across the surface of the dough.
- Sprinkle crumbled goat cheese over the tapenade, followed by toasted pine nuts.
- Roll and Chill:
- Roll the short ends of the dough inward toward the center until they meet.
- Tightly wrap the rolled dough in plastic wrap and refrigerate for about 30 minutes to firm up.
- Preheat and Prepare:
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
- Slice and Bake:
- Unwrap the chilled dough and use a serrated knife to cut it into 1/4-inch thick slices.
- Place the slices on the prepared baking sheet, spacing them about 2 inches apart.
- Sprinkle the tops with a pinch of coarse salt.
