Shredded Roast Beef Stuffed Sweet Potatoes (Whole 30 & Paleo)

  • Cook the Roast:
    • Place the roast in a Crock Pot.
    • Pour beef broth over the roast until it’s mostly covered.
    • Set the Crock Pot to low and cook for 8 hours, or until the roast is tender and easily shreds.
  • Cook the Sweet Potatoes:
    • While the roast is cooking, prepare the sweet potatoes. You can bake, roast, or microwave them until fully cooked and tender.
  • Shred the Roast:
    • Once the roast is done, remove it from the Crock Pot and shred the meat with two forks. Discard any excess fat.
  • Assemble the Dish:
    • Slice the cooked sweet potatoes down the center and fluff the insides with a fork.
    • Top each sweet potato with a generous amount of shredded roast beef.
