Simple Blueberry Bread
Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan, and set aside.
Make the Batter:
- In a large bowl, use an electric mixer on low speed to beat the butter and 1 cup of sugar together until just blended.
- Increase the mixer speed to medium and continue beating until light and fluffy, about 5 minutes.
- In a separate medium bowl, combine the flour, baking powder, and salt. Set aside.
- Reduce the mixer speed to low and add the eggs one at a time, beating well after each addition. Occasionally scrape down the sides of the bowl with a rubber spatula to ensure everything is mixed well.
- Alternately add the flour mixture and the milk to the batter, mixing just until combined after each addition.
Add the Blueberries:
- Gently fold the blueberries into the batter, being careful not to break them.
Bake the Bread:
- Spoon the batter into the prepared loaf pan, spreading it evenly.
- Bake for 1 hour and 5 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Cool and Serve:
- Let the bread cool in the pan on a wire rack for 10 minutes.
- After 10 minutes, remove the bread from the pan and cool completely on the wire rack before slicing and serving.
