Soy Ginger Glazed Halibut with Ginger Peach Relish
- Prepare the Marinade:
- Peel and roughly chop a piece of ginger. In a blender, combine the soy sauce, white wine, olive oil, and 1 tablespoon of the chopped ginger. Blend until smooth. This step ensures that the ginger’s pulp and juices fully infuse into the marinade.
- Marinate the Fish:
- In a zip-lock bag or a covered bowl, add the halibut fillets along with the marinade. Seal the bag (or cover the bowl) and let the fish marinate for at least 20 minutes. For deeper flavor, marinate for several hours if you have the time.
- Broil the Fish:
- Preheat your oven to the broil setting. Once heated, place the fish and all the marinade in a casserole dish. Position the casserole dish on one of the top racks in the oven. Broil for about 10-12 minutes, or until the fish has a nice brown glaze on top and is cooked through.
