Spicy Lemongrass Soup

Prepare the Broth:

  • Chop the lemongrass into 2-inch pieces and slice each piece down the center to release its flavor.
  • Add the lemongrass, broth, coconut milk, garlic, and ginger to a soup pot.
  • Bring the mixture to a boil, then reduce the heat and simmer on low for 30 minutes.
  • Strain the broth through cheesecloth to remove the lemongrass stalks, as they are not edible.

Build the Soup:

  • Return the strained broth to the pot and bring it back to a simmer.
  • Add tofu, mushrooms, snow peas, and rice noodles to the pot.
  • Add lime juice at any stage for a tangy kick—some at the beginning and a little more just before serving works well.

Cook and Serve:

  • Simmer the soup until the rice noodles are tender.
  • Garnish with grated ginger or sliced scallions for a fresh and aromatic finish.
