Spinach Pie with Home made Dough

Step 1: Prepare the Dough

  1. Mix Ingredients:
    • In a large bowl, mix room-temperature butter and flour together until the mixture resembles coarse crumbs.
    • Add in the slightly beaten egg, water, and salt. Knead until the dough is smooth and no longer sticky.
  2. Chill the Dough:
    • Wrap the dough in plastic wrap and place it in the fridge while you prepare the filling.

Step 2: Prepare the Filling

  1. Combine Ingredients:
    • In a bowl, mix together the defrosted and well-drained spinach, shredded cheese, sour cream, chopped dill, chopped onion, and finely shredded carrots.
  2. Add Eggs and Seasoning:
    • Beat the eggs, reserving one yolk for brushing the top of the pie.
    • Stir the beaten eggs into the spinach mixture.
    • Add salt and pepper to taste. If using different cheeses, a mix of feta and cheddar works well for a balanced flavor and smooth filling.

Step 3: Assemble the Pie

  1. Preheat Oven:
    • Preheat your oven to 356°F (180°C).
  2. Roll Out the Dough:
    • Take the dough out of the fridge and divide it into two parts—one larger for the base and one smaller for the lattice top.
    • Roll out the larger piece to fit the bottom and sides of your baking tray, then press it into the greased tray, covering the edges.
  3. Add Filling and Top:
    • Spread the spinach filling evenly over the dough in the tray.
    • Roll out the remaining dough and cut it into strips for a lattice top. Lay the strips over the filling, weaving them into a crisscross pattern.
  4. Brush with Egg Wash:
    • In a small bowl, mix the reserved egg yolk with 3 tablespoons of milk. Brush this mixture over the dough strips on top of the pie.
