Spinach, Tomato & Onion Couscous

Cook the Couscous:

  • Bring water and half of the salt to a boil in a small pan.
  • Once boiling, add the couscous, stir, and cover with a lid.
  • Remove the pan from the heat and let it sit for 5–7 minutes while you prepare the vegetables.

Sauté the Vegetables:

  • Heat 2 tablespoons of olive oil in a large pan over medium-high heat.
  • Once the oil is hot, add the onions and sauté until they begin to brown.
  • Add the tomatoes and the remaining salt, sautéing for another 20–30 seconds until the tomatoes begin to wilt.
  • Add the spinach and cook just until wilted but still bright green.
  • Stir in the pine nuts and remove the pan from heat. Season with salt and pepper to taste.

Combine and Serve:

  • Fluff the cooked couscous with a fork and transfer it to a large bowl.
  • Add the sautéed vegetables and crumbled feta to the couscous and toss everything together.
  • Top with additional crumbled feta, and serve hot. Enjoy!
