Steaks with Pesto, Tomatoes and Feta Cheese

  1. Prepare the Tomato Bake:
    • Preheat your oven to 200°C (390°F).
    • Line a baking tray with parchment paper and arrange the tomatoes on top.
    • Scatter capers, garlic cloves, and crumbled feta over the tomatoes.
    • Drizzle with olive oil and sprinkle with cracked black pepper.
    • Roast for about 30 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven, sprinkle with fresh basil, and set aside.
  2. Prepare the Steaks:
    • Use a meat mallet to gently flatten the steaks to an even thickness.
    • Spread 1 tablespoon of red pesto on one side of each steak. Roll the steaks tightly with the pesto side inside, and secure with wooden or metal toothpicks.
  3. Coat the Steak Rolls:
    • In a shallow plate, mix together cornflour, dried basil, salt, and pepper.
    • Lightly dredge the steak rolls in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
  4. Cook the Steak Rolls:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the steak rolls and cook for 5–6 minutes, turning constantly to ensure they are browned and golden on all sides.
  5. Serve:
    • Remove the toothpicks from the steak rolls before serving.
    • Plate the steak rolls alongside the roasted tomato, capers, garlic, and feta bake.
