Steaks with Pesto, Tomatoes and Feta Cheese
- Prepare the Tomato Bake:
- Preheat your oven to 200°C (390°F).
- Line a baking tray with parchment paper and arrange the tomatoes on top.
- Scatter capers, garlic cloves, and crumbled feta over the tomatoes.
- Drizzle with olive oil and sprinkle with cracked black pepper.
- Roast for about 30 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven, sprinkle with fresh basil, and set aside.
- Prepare the Steaks:
- Use a meat mallet to gently flatten the steaks to an even thickness.
- Spread 1 tablespoon of red pesto on one side of each steak. Roll the steaks tightly with the pesto side inside, and secure with wooden or metal toothpicks.
- Coat the Steak Rolls:
- In a shallow plate, mix together cornflour, dried basil, salt, and pepper.
- Lightly dredge the steak rolls in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.
