Sun Dried Tomato and Herb Baked Eggs

  • Preheat the Oven:
    Preheat the oven to 350°F (175°C).
  • Prepare the Ramekin:
    Lightly coat the inside of a ramekin or oven-safe dish with olive oil.
  • Add Sundried Tomatoes and Eggs:
    Line the bottom of the dish with sundried tomatoes. Crack two eggs on top of the tomatoes and sprinkle with fresh herbs of your choice (like thyme or basil).
  • Bake:
    Place the dish in the oven and bake, uncovered, for 15-20 minutes, or until the egg whites are firm and the yolks are still soft.
  • Serve:
    Remove from the oven and serve immediately, enjoying with crusty bread or your favorite side.
