Szechuan-Style Shirataki Noodles

Prepare the Shirataki Noodles:

  • Microwave the shirataki noodles on high for 1 minute. Drain them thoroughly, then pat them dry with paper towels. Set aside.

Prepare the Protein:

  • In a bowl, combine the soy sauce, rice wine, and chili sauce with your protein. Toss to coat, or mix thoroughly if using ground meat. Set aside.

Sauté the Vegetables:

  • Spray a non-stick skillet with vegetable oil and heat it over high heat.
  • Add the ginger and cook for about 30 seconds, until it becomes fragrant.
  • Toss in the veggies and stir-fry until they are nearly al dente (but not quite fully cooked).

Add the Protein:

  • Add the scallions and your prepared protein to the skillet. Stir-fry until the protein is cooked through (about 1-2 minutes for tofu, soy, or turkey).

Finish the Dish:

  • Add the noodles to the skillet, sprinkle with about 2 teaspoons of soy sauce, and cook for an additional 1 minute, until the shirataki noodles are heated through.

Serve:

  • Transfer the noodles to a serving bowl, drizzle with sesame oil, and toss to combine. Enjoy!

3packages shirataki drained and rinsed, cold
8oz protein firm, (ground turkey, soy crumbles, or tofu)
2tablespoons soy sauce for this dish, (I like double soy )
2tablespoons rice wine dry
1teaspoon chili sauce (Szechuan if possible, I often use Sriracha)

3 scallions white, green, sliced, thin, (both and parts)
2cups veggies raw, chopped
