Tofu Chickpeas Lettuce Wraps
Prepare the Chili Paste:
- Soak the whole red chilies in warm water for 10 minutes.
- Grind the soaked chilies into a smooth paste and set aside.
Cook the Aromatics:
- Heat oil in a nonstick pan or wok over medium heat.
- Add the garlic, ginger, and sesame seeds. Sauté for about 30 seconds until fragrant.
- Add the scallions (green onions) to the pan and sauté for another 2 minutes until softened.
- Add the shredded carrots and mix well.
Combine the Flavors:
- Stir in the prepared chili paste, soy sauce, and vinegar. Mix everything together until well combined.
- Add the tofu and gently toss to coat. Cover and cook for 2 minutes to allow the flavors to meld.
Add Chickpeas and Final Ingredients:
- Add the chickpeas, salt, and maple syrup to the pan. Stir well, then cover and cook for another 2 minutes.
- Once everything is heated through, stir in the cilantro, mixing until evenly distributed.
Assemble and Serve:
- Serve the tofu and chickpea mixture on fresh lettuce leaves, topping with a few drops of lemon juice for added freshness.
