Turbo Chicken
- Marinate the Chicken:
In a bowl, combine the soy sauce, salt, and juice from the calamondin. Rub the marinade thoroughly all over the chicken, including inside the cavity. Allow the chicken to marinate for 10-20 minutes on each side. - Prepare the Turbo Broiler:
Place a small baking pan at the bottom of the turbo broiler to catch the drippings (this will be used to make gravy later). - Broil the Chicken:
Preheat the turbo broiler to 250°F (120°C).
Place the marinated chicken on the rack, breast side up, and broil for 30 minutes. - Flip and Finish Cooking:
After 30 minutes, turn the chicken over and broil for an additional 10 minutes, or until the skin is crisp and golden brown. The total cooking time should be 40 minutes. - Rest the Chicken:
Once cooked, remove the chicken from the broiler and let it rest for a few minutes before carving.
Gravy Instructions:

Pour the chicken drippings from the baking pan into a small saucepan. Place the saucepan over low heat. - Thicken the Sauce:
In a separate cup, dissolve 1 tablespoon of flour in 1/4 cup of water. Slowly pour this mixture into the drippings while stirring constantly. - Season and Simmer:
Add salt, pepper, and a few drops of calamondin juice to taste. Continue stirring until the gravy thickens to your desired consistency. Remove from heat.
Serve:
Carve the chicken and serve with the freshly made gravy. Enjoy!
