Wholemeal Steam Bun

Prepare the Dough

  1. Mix Ingredients:
    • In a large mixing bowl, combine all ingredients listed as A. Knead until the mixture forms a smooth and elastic dough.
  2. Let the Dough Prove:
    • Cover the bowl with a damp cloth and allow the dough to rise until it has doubled in size.
  3. Incorporate Baking Powder:
    • Once the dough has risen, sift the ingredients listed as B over the top of the dough. Knead well to evenly distribute the baking powder until the dough is smooth again.
  4. Rest the Dough:
    • Cover the dough again and let it rest for 15 minutes before shaping.

Prepare the Meat Filling

  1. Marinate the Meat:
    • In a bowl, combine shredded chicken or pork with 2 tablespoons of BBQ sauce and a bit of water. Let the mixture marinate for 30 minutes.
  2. Cook the Filling:
    • Heat oil in a pan over medium heat. Add the marinated meat and stir-fry until aromatic. Add a small amount of water and cook for an additional 5 minutes or until the meat is tender. Taste and adjust seasoning if needed.
    • Allow the filling to cool, then chill in the fridge for 3 hours.

Shape and Steam the Buns

  1. Divide the Dough:
    • Once the dough has rested, divide it into 12 equal portions and shape each portion into a ball.
  2. Shape the Buns:
    • Flatten each ball and roll it into a round disc. Place 1 tablespoon of the filling in the center. Gather the edges and pleat them to seal the bun.
  3. Prepare for Steaming:
    • Line each bun with a piece of white paper and place them on a steaming tray. Let the buns prove again for another 15 minutes.
  4. Steam the Buns:
    • Fill a steamer with water and bring it to a boil. Steam the buns over high heat for about 15 minutes, or until they are fully cooked and fluffy.
  5. Serve:
    • Serve the buns hot and enjoy!
