Winter Spiced Pear Cake (Gluten Free)
- Preheat Oven:
- Preheat the oven to 350°F (175°C). Butter or grease a 9–10 inch cake pan.
- Prepare Spiced Sugar:
- In a small bowl, mix sucanat (or brown sugar), cardamom, pumpkin spice blend, and cinnamon. Set aside 2 tablespoons of this spiced sugar to sprinkle on top later.
- Cream Butter and Sugar:
- In a large mixing bowl, cream 1/2 cup butter, 1/4 cup maple syrup, and 2 tablespoons of the spiced sugar with an electric mixer on medium speed for about 3 minutes, until light and fluffy.
- Add 2 eggs, one at a time, mixing well after each addition.
- Mix Dry Ingredients:
- In a separate bowl, sift together coconut flour, arrowroot flour, almond flour, baking powder, and salt.
- Combine Wet and Dry Ingredients:
- Add half of the dry ingredients to the butter mixture, stirring on low until just combined.
- Add 1/4 cup coconut cream and 1 teaspoon vanilla extract, mixing gently.
- Add the remaining dry ingredients and mix until just combined. The batter will be thick.
- Prepare Pears:
- Cut pears away from their cores. Dice 1 cup of pear into small cubes and set aside. Slice the remaining pears into 1/2-inch wedges. Toss wedges in lemon juice to prevent browning.
- Gently fold the pear cubes into the batter.
- Assemble and Bake:
- Transfer the batter to the greased cake pan, spreading evenly.
- Arrange the pear wedges in a fan pattern or design of your choice on top of the batter, pressing them in slightly.
- Sprinkle the reserved spiced sugar over the top.
- Bake:
- Bake for 35–50 minutes (baking time may vary depending on your oven) or until a toothpick inserted into the center comes out clean.
