Winter Spiced Pear Cake (Gluten Free)
- Prepare the Oven and Cake Pan:
- Preheat your oven to 350°F.
- Grease and flour a 9-10 inch cake pan or line it with parchment paper.
- Make the Spiced Sugar:
- In a small bowl, mix together sucanat, cardamom, pumpkin spice blend, and cinnamon.
- Set aside 2 tablespoons of the spiced sugar for topping the cake later. Add the rest of the spiced sugar to the butter.
- Cream the Butter and Sugar:
- In a large mixing bowl, use a mixer to cream together the butter, maple syrup, and spiced sucanat until light and fluffy, about 3 minutes, scraping down the sides as needed.
- Incorporate the Eggs:
- Add the eggs one at a time, beating well after each addition to fully incorporate them.
- Mix the Dry Ingredients:
- In a separate medium bowl, sift together the coconut flour, arrowroot flour, almond flour, baking powder, and salt.
- Gradually add half of the dry ingredients to the butter mixture, mixing on low speed until just combined.
- Add the coconut cream and vanilla extract, mixing on low until incorporated.
- Add the remaining dry ingredients, mixing gently until combined. The batter will be thick.
- Prepare the Pears:
- Core and peel the pears. Dice one pear into 1 cup of medium-sized cubes, and slice the remaining pears into ½-inch wedges.
- Drizzle the lemon juice over the pear wedges to prevent browning.
- Assemble the Cake:
- Gently fold the pear cubes into the batter.
- Transfer the batter to the prepared cake pan, spreading it evenly.
- Arrange the pear wedges on top, fanning them out or creating your desired design. Gently press them into the batter so some of the batter comes through.
- Top the Cake:
- Sprinkle the reserved 2 tablespoons of spiced sugar over the top of the cake.
- Bake the Cake:
- Bake for about 35-50 minutes or until a toothpick inserted into the center comes out just barely clean. Baking time may vary depending on your oven.
- Serve and Enjoy:
- Let the cake cool before serving. This cake is perfect for coffee, breakfast, a snack, or dessert.
