Yoghurt Honey Madeleines
Prepare the Mould:
- Grease the madeleine mould with some soft butter and set aside.
Make the Batter:
- Gently whisk the egg, then add in the sugar and honey.
- Whisk until the sugar is dissolved.
- Add the natural yoghurt and whisk vigorously until the batter becomes foamy.
- Gradually add the sifted flour and baking powder, mixing until just combined and the batter forms a thick paste.
Incorporate the Butter:
- Add the melted butter in two batches, mixing well after each addition.
Fill the Mould and Bake:
- Scoop the batter into the mould using a spoon, filling each cavity evenly.
- Bake in the preheated oven at 180°C for about 12 minutes, or until a skewer inserted comes out clean.
Cool the Madeleines:
- Remove the madeleines from the mould and place them on a wire rack to cool.
