20g honey
50g sugar
40g natural yoghurt
90g flour plain
0.5tsp baking powder
70g butter melted

Prepare the Mould
Grease the madeleine mould with some soft butter and set aside.

1. Gently whisk the egg, then add in the sugar and honey. | 2. Whisk until the sugar is dissolved. | 3. Add the natural yoghurt and whisk vigorously until the batter becomes foamy. | 4. Gradually add the sifted flour and baking powder, mixing until just combined and the batter forms a thick paste.

Incorporate the Butter
Add the melted butter in two batches, mixing well after each addition.

Fill the Mould and Bake
