Appetizing Apple and Almond Soup

  • Prepare the Ingredients:
    • Wash and rinse 4 apples thoroughly.
    • Cut the apples (with the skin on) into rough chunks. Also, roughly chop 1 cup gooseberries, 1 cup tomatoes, and 2 medium carrots.
    • Soak 1/2 cup almonds in warm water for about 10 minutes, then peel off the skins.
  • Cook the Soup:
    • In a deep-bottomed pan or pressure cooker, bring 3 cups of water to a boil.
    • Add the chopped apples, gooseberries, tomatoes, carrots, and peeled almonds to the boiling water.
    • If using a pressure cooker, cover and cook for 4 whistles. If using a regular pot, simmer until the vegetables are tender (about 15-20 minutes).
  • Blend the Soup:
    • Once cooked, carefully transfer the mixture to a blender and puree until smooth.
  • Optional Sieve:
    • If you prefer a smoother texture, strain the pureed soup through a fine sieve.
  • Season and Creamify:
    • Season the soup with salt and sugar to taste.
    • For a creamier texture, stir in 1/2 cup heavy cream and simmer for an additional 5 minutes.
  • Serve:
    • Ladle the soup into bowls and enjoy warm!
