Appetizing Apple and Almond Soup
- Prepare the Ingredients:
- Wash and rinse 4 apples thoroughly.
- Cut the apples (with the skin on) into rough chunks. Also, roughly chop 1 cup gooseberries, 1 cup tomatoes, and 2 medium carrots.
- Soak 1/2 cup almonds in warm water for about 10 minutes, then peel off the skins.
- Cook the Soup:
- In a deep-bottomed pan or pressure cooker, bring 3 cups of water to a boil.
- Add the chopped apples, gooseberries, tomatoes, carrots, and peeled almonds to the boiling water.
- If using a pressure cooker, cover and cook for 4 whistles. If using a regular pot, simmer until the vegetables are tender (about 15-20 minutes).
- Blend the Soup:
- Once cooked, carefully transfer the mixture to a blender and puree until smooth.
- Optional Sieve:
- If you prefer a smoother texture, strain the pureed soup through a fine sieve.
- Season and Creamify:
- Season the soup with salt and sugar to taste.
- For a creamier texture, stir in 1/2 cup heavy cream and simmer for an additional 5 minutes.
- Serve:
- Ladle the soup into bowls and enjoy warm!
