Sweet Potato, Kale & White Bean Soup
Start with the Sweet Potato and Onion:
- In a large pot, heat grapeseed oil over medium-high heat.
- Add sweet potato and sauté, stirring frequently, for about 5 minutes.
- Add the onion and continue sautéing for about 8 more minutes.
- Add a splash of chicken broth to help steam the sweet potato and onion (it should sizzle when it hits the pot).
- Continue cooking until the sweet potato is softened but still slightly firm, about 5 more minutes.
Build the Soup Base:
- Pour in the remaining chicken broth and white wine.
- Add the cannellini beans, oregano, and thyme. Stir everything well.
- Bring the mixture to a boil, then reduce the heat to medium-low.
- Cover and let the soup simmer for about 10 minutes.
Add the Kale:
- Stir in the chopped kale leaves, cover, and cook for another 5 minutes or until the kale is softened.
Season and Serve:
- Taste the soup and adjust seasoning with salt and ground black pepper as needed.
- Serve hot and enjoy this hearty, comforting soup!
