Yorkshire Pudding
Prepare the Batter:
- Preheat the oven to 400–450°F. (You may need to adjust this based on your oven; once you’ve made these a few times, you’ll find the perfect temperature.)
- Sift the flour and salt into a bowl and mix.
- In a separate bowl, whisk together the eggs and milk. Combine the wet and dry ingredients until smooth.
Heat the Dripping:
- Pour a small amount of dripping into each section of a Yorkshire pudding tray (or use a muffin or cupcake tray).
- Place the tray in the oven to heat the oil until very hot.
Cook the Puddings:
- Carefully remove the tray from the oven and spoon a couple of tablespoons of batter into each section.
- Immediately return the tray to the oven and bake for about 20 minutes. Important: Do not open the oven while cooking, as this can cause the puddings to deflate.
